A ‘Hot Cross Bun’ in a mug (the cross is optional).
Ingredients
- 4 tbsp plain flour (30g)
- 1.5 tbsp melted butter (20g)
- 3 tbsp whole milk (45ml)
- 1.5 tbsp maple syrup or honey (22ml)
- 1 tbsp raisins or sultanas (approx. 15g)
- ½ tsp mixed spice (or a mix of cinnamon, nutmeg, and ginger)
- ½ tsp freshly grated orange zest
- ¼ tsp baking powder
- Salt a tiny pinch.
- Optional – for the Cross
- 1 tbsp plain flour
- 1 to 2 tsp water
- Optional – ¼ tsp honey or maple syrup for the ‘glaze’
Method
- In a large microwave-safe mug, microwave the raisins and milk together for 20 seconds.
- Add the melted butter, maple syrup, orange zest, and mixed spice. Stir well.
- Fold in the flour, baking powder, and salt. Stir until you have a smooth, aromatic batter.
- Optional ‘Cross’
- In a small bowl, mix the flour with 1 teaspoon of water. Stir vigorously until it forms a thick, smooth paste. If it’s too crumbly, add a few more drops of water until it reaches the consistency of toothpaste.
- Use a small spoon or a sandwich bag with the corner snipped off to draw the cross.
- Microwave on High (800W) for 70 to 90 seconds. The top should look set and it should smell like a bakery.
- Let it rest for 2 minutes.
- If a glazed look is required, brush the top with warmed honey.
