Banana Bread

Ingredients

  • 4–5 medium very ripe bananas mashed
  • 150g sugar (white or brown)
  • 120g butter melted
  • 2 large eggs, beaten
  • 180g plain flour
  • 1 teaspoon bicarbonate of soda
  • ¼ teaspoon salt
  • Spices (Optional): 1 tsp cinnamon, ¼ tsp nutmeg, ¼ tsp ginger

Method

  1. Preheat your oven to 175°C (350°F, Fan 155°C) and grease a standard loaf pan.
  2. In a bowl, whisk together the melted butter, sugar, beaten eggs, and mashed bananas.
  3. In a separate bowl, stir together the flour, baking soda, salt, and spices if using.
  4. Slowly add the wet ingredients into the dry bowl. Stir only until the flour streaks disappear do not overmix.
  5. Pour into the loaf pan and bake for 50–60 minutes. It is done when a skewer inserted into the centre comes out clean.
  6. Let it sit in the pan for 10 minutes before moving it to a wire rack.
  7. Chocolate chips (approx. 100g) or raisins (approx. 75g) could be added if desired.
