Ingredients
- 4–5 medium very ripe bananas mashed
- 150g sugar (white or brown)
- 120g butter melted
- 2 large eggs, beaten
- 180g plain flour
- 1 teaspoon bicarbonate of soda
- ¼ teaspoon salt
- Spices (Optional): 1 tsp cinnamon, ¼ tsp nutmeg, ¼ tsp ginger
Method
- Preheat your oven to 175°C (350°F, Fan 155°C) and grease a standard loaf pan.
- In a bowl, whisk together the melted butter, sugar, beaten eggs, and mashed bananas.
- In a separate bowl, stir together the flour, baking soda, salt, and spices if using.
- Slowly add the wet ingredients into the dry bowl. Stir only until the flour streaks disappear do not overmix.
- Pour into the loaf pan and bake for 50–60 minutes. It is done when a skewer inserted into the centre comes out clean.
- Let it sit in the pan for 10 minutes before moving it to a wire rack.
- Chocolate chips (approx. 100g) or raisins (approx. 75g) could be added if desired.
