Savoury Cheese Drop Cookies
Ingredients
- 250g Plain Flour, sifted
- 1 tbsp Baking Powder
- 1 tsp Mustard powder
- ½ tsp Sea Salt
- 115g Cold Unsalted Butter, cut into small cubes
- 125g mature cheddar
- 200ml Cold Whole Milk
- Optional – ½ tsp Smoked Paprika or a pinch of Cayenne Pepper
Method
- Preheat your oven 220°C (200°C fan/Gas 7).
- Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, mustard powder, salt and any optional seasonings.
- Use your fingertips to rub the butter into the flour until the mixture looks like coarse breadcrumbs.
- Add the grated cheddar into the flour mix and stir so the cheese is coated in flour.
- Pour in the milk. Stir with a fork just until a sticky dough forms. Do not overmix or they will be tough.
- Use a large spoon to drop mounds of dough onto the tray.
- Bake for 12–15 minutes until the cheese has bubbled and the tops are a deep golden brown.
- Let them rest on the tray for 5 minutes. They are best served warm and buttery.
