Savoury Cheese Drop Cookies

Ingredients

  • 250g Plain Flour, sifted
  • 1 tbsp Baking Powder
  • 1 tsp Mustard powder
  • ½ tsp Sea Salt
  • 115g Cold Unsalted Butter, cut into small cubes
  • 125g mature cheddar
  • 200ml Cold Whole Milk
  • Optional – ½ tsp Smoked Paprika or a pinch of Cayenne Pepper 

Method

  1. Preheat your oven 220°C (200°C fan/Gas 7).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, whisk together the flour, baking powder, mustard powder, salt and any optional seasonings.
  4. Use your fingertips to rub the butter into the flour until the mixture looks like coarse breadcrumbs.
  5. Add the grated cheddar into the flour mix and stir so the cheese is coated in flour.
  6. Pour in the milk. Stir with a fork just until a sticky dough forms. Do not overmix or they will be tough.
  7. Use a large spoon to drop mounds of dough onto the tray.
  8. Bake for 12–15 minutes until the cheese has bubbled and the tops are a deep golden brown.
  9. Let them rest on the tray for 5 minutes. They are best served warm and buttery.

  • Yields approximately 10 to 12 biscuits
