Very quick and easy to make.
Ingredients
- 250g Natural Smooth Peanut Butter (100% peanuts)
- 150g Golden Caster Sugar
- 1 Large Egg
- Optional – ½ tsp Sea Salt (if your peanut butter is unsalted)
Method
- Preheat your oven to 180°C (160°C fan/Gas 4).
- Line a baking tray with parchment.
- In a large bowl, beat the peanut butter, sugar, and egg together until the mixture forms a stiff, grainy dough.
- Scoop out tablespoons of the dough and roll them into balls about the size of a walnut. Place them on the tray, spaced about 2 inches apart.
- Use the back of a fork to press down on each ball twice in a criss-cross pattern.
- Bake for 10–12 minutes until the edges are just starting to turn golden brown.
- Cool – these are very fragile when hot. Leave them on the tray for at least 10 minutes to firm up before moving them.
Quantity
- Yields approximately 12 to 14 cookies
