Curried Lobster in Rice Timbales

Ingredients

  • 2 cups lobster meat (approx. 290g)
  • 2 tablespoons butter (28g)
  • 2 tablespoons flour
  • 1 tablespoon chopped onion
  • 1 tablespoon curry
  • 1 cup cream or stock (240ml)
  • 3 egg yolks
  • salt, paprika and cayenne

Method

  1. Melt butter; add onion; when yellow add flour, curry and cream.
  2. Cook five minutes.
  3. Season; add egg yolks and lobster meat.
  4. Fill Rice Timbale Cases, reheat, and serve.
