Lowney’s – Rice and Cheese Croquettes

Ingredients

  • 1 cup rice (approx. 190g)
  • 4 cups milk (960ml)
  • 1 cup cheese (approx. 120g)
  • salt and pepper
  • 1 egg
  • 1 cup thick White Sauce (240ml)

Method

  1. Cook rice in milk; when milk is absorbed add cheese, seasonings, and egg, and enough sauce to make of the consistency to shape.
  2. Shape, dip in crumbs, egg and crumbs, and fry in deep fat.
