Lowney’s – Cheese Cakes

Ingredients

  • 1 cup cottage cheese (approx. 240g)
  • ½ cup sugar (approx. 100g)
  • 3 tablespoons butter (42g)
  • 1 teaspoon salt
  • 3 eggs
  • rind and juice of one lemon
  • ½ cup raisins (approx. 80g)
  • ½ cup citron (approx. 100g candied fruit)

Method

  1. Mix the above ingredients and beat until smooth.
  2. Line patty tins with pastry, fill with cheese mixture.
  3. Bake in a moderate oven twenty minutes.
