Lowney’s – Sunshine Cake

Ingredients

  • 1 cup sugar (approx. 200g)
  • 5 egg yolks
  • ¼ teaspoon salt
  • ¾ cup flour (approx. 90g)
  • ½ teaspoon cream of tartar
  • 6 egg whites
  • 1½ tablespoons orange juice
  • 1 teaspoon lemon juice

Method

  1. Beat yolks until lemon-colored and thick; add sugar and flavoring and continue beating.
  2. Mix and sift flour and cream of tartar four times.
  3. Cut and fold in stiffly beaten whites, alternately with flour.
  4. Bake in an angel cake pan one hour in a moderate oven.
