Lowney’s – Simple Chocolate Cake

Ingredients

  • 3 eggs
  • ½ cup sugar (approx. 100g)
  • ¼ teaspoon salt
  • ¼ cup Lowney’s Cocoa (approx. 25g)
  • ½ teaspoon vanilla
  • grated rind and juice of ½ lemon
  • 1 tablespoon flour
  • ½ teaspoon cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon clove

Method

  1. Mix cocoa, spice, flour, baking powder, and salt; beat the yolks of eggs until lemon-colored and thick; add sugar and beat well; add lemon juice and rind; when well blended, add chocolate mixture and the beaten whites of eggs.
  2. Bake in buttered shallow pans twenty minutes in a moderate oven.
  3. When cool put together with Chocolate Frosting or Currant Jelly or White Mountain Cream.
