Lowney’s – Chocolate Nut Cakes

Ingredients

  • 4 squares Lowney’s Premium Chocolate, grated (112g)
  • 1½ cups sugar (approx. 300g)
  • 3 teaspoons baking powder
  • 1 cup nut meats broken in pieces (approx. 130g)
  • 2¼ cups flour (approx. 270g)
  • ½ cup milk (120ml)
  • 8 egg whites
  • 1 teaspoon vanilla
  • salt
  • ¾ cup butter (165g)

Method

  1. Cream butter; add sugar, flour in which baking powder has been sifted, and milk, and beat well; add whites of eggs beaten stiff and nut meats; then add chocolate and vanilla.
  2. Pour into buttered gem pans and bake in hot oven twenty-five minutes.
