Lowney’s – Angel Cake

Ingredients

  • 1 cup granulated sugar (approx. 200g)
  • 1 cup egg whites (240ml)
  • 1 cup flour (approx. 120g)
  • ¼ teaspoon salt
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla

Method

  1. Beat egg whites on platter with wire beater.
  2. When foamy, add cream of tartar; when stiff, add sugar gradually.
  3. Sift flour four times with salt.
  4. Cut and fold into egg mixture.
  5. Add vanilla, bake one hour in moderate oven in angel cake pan.
  6. Invert pan on cake cooler and allow it to drop out itself.
  7. If too brown, wrap in wet cheese cloth for ten minutes; then brown may be easily removed.
