Oatmeal Bread

Ingredients

  • 1 cup rolled oats (approx. 85g)
  • ½ yeast cake (approx. 3.5g dried active yeast)
  • ½ cup corn meal (approx. 60g)
  • ¼ cup lukewarm water (60ml)
  • 1½ teaspoons salt
  • ½ cup molasses (120ml)
  • 1 tablespoon shortening (lard)
  • 4 cups flour (approx. 480g)
  • 2 cups boiling water (480ml)

Method

  1. Mix oats, corn meal, salt, and shortening; add boiling water, and let stand one hour.
  2. Add yeast dissolved in lukewarm water, molasses, and flour.
  3. Mix well, cover, and let rise until double in bulk.
  4. Beat well, turn into two greased pans, let rise, and bake in a hot oven (220°C, 425°F , Gas Mark 7, Fan 200°C) about fifty minutes.
