Lowney’s – Ginger Snaps

Ingredients

  • 1 cup molasses (240ml)
  • ¼ to ½ cup butter, suet, or chicken fat (55-110g)
  • 3 cups flour (approx. 360g)
  • ½ teaspoon soda
  • 1 tablespoon ginger
  • 2 teaspoons salt

Method

  1. Boil shortening and molasses two minutes.
  2. Add remaining ingredients, mixed and sifted. Beat well; chill over night.
  3. Roll very thin. Shape with knife or cutter. Bake on buttered pan in quick oven eight to ten minutes (220°C, 425°F , Gas Mark 7, Fan 200°C).
