Made with buttermilk … soft and cake-like.
Ingredients
- ½ cup soft shortening (113g half Lard, half butter)
- 1 cup sugar (approx. 200g)
- 1 egg
- ¾ cup buttermilk (180ml)
- 1 tsp vanilla
- 2 cups sifted GOLD MEDAL Flour (approx. 220g plain flour)
- ¼ tsp. soda
- ½ tsp. salt
Method
- Mix together the shortening, sugar, and egg.
- Stir in the buttermilk and vanilla.
- Sift together and stir in, the flour, soda and, salt.
- Chill dough.
- Drop rounded teaspoonfuls about 2″ apart on lightly greased baking sheet.
- Sprinkle with mixture of sugar and cinnamon (¼ cup sugar (approx. 50g) and 1 tsp. cinnamon).
- Bake until set but not brown.
Baking
- Bake in a mod. hot oven for 8 to 10 minutes.
- 190°C–200°C, 375°F–400°F , Gas Mark 5–6, Fan 170°C–180°C
