Betty Crocker –New Northland Cookies

Crunchy, flavourful shortening-savers.

Ingredients

  • 6 tbsp soft shortening (part butter)
  • 1 cup brown sugar (approx. 200g)
  • ¼ cup cold water (60ml)
  • 1¾  cups sifted GOLD MEDAL Flour (approx. 193g plain flour)
  • 1 tsp. soda
  • ½ tsp. salt
  • ½ tsp. cinnamon
  • ½ cup cut-up blanched almonds (approx. 75g)

Method

  1. Mix together the shortening and sugar.
  2. Stir in the cold water.
  3. Sift together and stir in the flour, soda, salt and cinnamon.
  4. Mix in the almonds.
  5. Mix thoroughly with hands. Press and mould into a long smooth roll about 2½″ in diameter. Wrap in waxed paper, and chill until stiff (several hours or overnight).
  6. With a thin, sharp knife, cut in thin slices ⅛″ to ¹⁄₁₆″ thick.
  7. Place slices a little apart on ungreased baking sheet.
  8. Bake until lightly browned.
  9. Remove from pan immediately.

Baking

  • Bake in a mod. hot oven for 6 to 8 minutes.
  • 190°C–200°C, 375°F–400°F , Gas Mark 5–6, Fan 170°C–180°C

Quantity

  • About 4 doz. 2½″ cookies.
