Cheese Cakes
Ingredients
- 1 cup cottage cheese (approx. 240g)
- ½ cup sugar (approx. 100g)
- 3 tablespoons butter (42g)
- 1 teaspoon salt
- 3 eggs
- rind and juice of one lemon
- ½ cup raisins (approx. 80g)
- ½ cup citron (approx. 100g candied fruit)
Method
- Mix the above ingredients and beat until smooth.
- Line patty tins with pastry, fill with cheese mixture.
- Bake in a moderate oven twenty minutes.

Cheese Rissoles
Ingredients
- ¾ cup grated cheese (approx. 90g)
- 1 tablespoon flour
- 2 egg whites
- ¼ teaspoon salt
- cayenne
- cracker crumbs
Method
- Beat whites until stiff, add other ingredients, put a teaspoon of this mixture on rounds of pastry; brush the edges with water; fold edges together, making a half round; press edges together firmly; dip in crumbs, egg and crumbs, and fry in deep fat.

Rice and Cheese Croquettes
Rice and Cheese Croquettes
Ingredients
- 1 cup rice (approx. 190g)
- 4 cups milk (960ml)
- 1 cup cheese (approx. 120g)
- salt and pepper
- 1 egg
- 1 cup thick White Sauce (240ml)
Method
- Cook rice in milk; when milk is absorbed add cheese, seasonings, and egg, and enough sauce to make of the consistency to shape.
- Shape, dip in crumbs, egg and crumbs, and fry in deep fat.
